Summer Sharer: Recipe Resort

I've been sharing some of my favourite recipes within 'Summer Special's 'Recipe Resort' posts. But, truth be known, whilst I love experimenting there are only a few recipes that I actually enjoy following. So, I'd love to know what recipes you enjoy making and then (maybe) I'll try some for myself.
